BBQ Pulled Chicken Sandwich

Mmmm. Simple and easy to make BBQ Pulled Chicken Sandwich should make it onto your summer “must try” list. I get this started in the morning in my crockpot and while I’m off adventuring, working, or playing … it’s cooking itself! Needless to say, the crockpot is my kitchen’s new best friend!

Here’s what you’ll need:

4-6 pieces organic free-range chicken thighs or wings. (It’s important that the meat you choose has some fat on it, so chicken breasts aren’t the best because they will be dry.)

1 12-ounce bottle of Annie’s Naturals Organic BBQ Sauce

1 medium yellow onion (cut into large slices)

1 teaspoon Vegenaise (Vegan Mayonnaise option for sandwich)

Gluten-free or whole wheat bread, toasted

Here’s what you’ll do:

Place chicken thighs or wings into crock pot with BBQ sauce and cut onions. Cook on low for 4-6 hours, or until chicken is completely cooked. Remove chicken from the bone and use a fork to shred the chicken. Toast bread, spread with Vegenaise and place BBQ chicken on top to enjoy!
