
Looking for something hearty and healthy? This is a must try! You will enjoy this recipe even if you aren’t Vegan or Gluten-free! This open-faced Garbanzo Bean Salad Sandwich is surprisingly delicious and super satisfying when you are needing heartier lunch.
Here’s what you’ll need:
1 15-oz. can of organic garbanzo beans (strain and rinse)
1/8 cup roasted almonds (or any roasted nut or seed, finely chopped)
3 tablespoons vegenaise* (vegan mayonnaise)
1/2 teaspoon honey mustard
1/4 cup red onion (chopped)
salt and pepper to taste
gluten-free (GF) bread
avocado, tomato, lettuce for sandwich toppings
Here’s what you’ll do:
After straining and rinsing the garbanzo beans, pour them in a medium-sized bowl. Add the chopped roasted almonds, vegenaise,* honey mustard and chopped red onion. Then add salt and pepper to your liking. Mix together and you are done! Enjoy open faced on a slice of toasted gluten-free bread with avocado, sliced tomato and lettuce.
