As the carefree feeling of summer fades, the weather cools and life becomes a little more hectic, I begin finding my new fall rhythm. Finding my new fall food rhythm has been a difficult task, until NOW. Prepared the night before, these delicious and healthy jars of salad have made my life easy. Here’s what you’ll need …
Jar-O-Salad
Ingredients
1 large Mason jar
Your favorite dressing
Your favorite salad fixings
Directions:
Pour the dressing on the bottom of the jar so that it won’t wilt the greens that will go on top. Then add a hearty vegetable, such as tomato, broccoli or anything else that can soak in the dressing. Add your other favorite toppings: maybe hard boiled egg, garbanzo beans, chicken, carrots, etc. Finally, fill the top part of the jar with about 1 cup of greens. Seal with the lid and keep in your refrigerator. If you feel ambitious, make a few days’ worth! Just remember not to tip it upside down because the dressing will reach the lettuce greens and they will wilt before you are ready to eat them. Enjoy!
