Oatmeal Chocolate Chip Cookies GF/V

A friend of mine introduced these delicious cookies to me about a month ago and I have been making them every week since then. They are a great snack, breakfast, or dessert! I love indulging in 3-4 with a cup of coffee or tea in the morning. Enjoy!

What you’ll need:

7 medium bananas (mashed)

4 cups oatmeal

1 cup semi-sweet chocolate chips

Thats it!

Mash bananas well in a food processor, blender, or with a fork. Then add oats and chocolate chips. Oil a baking sheet with coconut oil and make 1″ balls with the mixture. Flatten the balls a little because they will not spread out on their own. Bake at 350 degrees for 15 minutes or until cookies are firm to the touch. Allow 5 minutes to cool after baking and then enjoy! These delicious cookies last about 3 days in the refrigerator. Substitute the chocolate chips for raisins and/or add 1/2 cup of peanut butter for amazing variations of this recipe!

Recipe makes about 3 dozen cookies.
