Orange Coconut French Toast

I don’t know about you, but I can’t pass up any opportunity to indulge in a homemade batch of French Toast. Even if someone simply mentions the idea of making it, I become instantly hooked and can’t think of anything I would like more. Here is a recipe I recently learned from a dear friend of mine. She just so happens to love French Toast as much as I do.

Here’s what you’ll need …

4 cage-free organic eggs

2/3 cup organic coconut milk

1 teaspoon pure vanilla extract

2 teaspoons ground cinnamon

2 teaspoons organic cane sugar

2 teaspoons orange zest (use a grater and peel off the outside of the orange)

pinch of salt

powdered sugar or Grade B maple syrup (grade B is less processed than grade A)

butter

Any type of bread you have in the house can be turned into French Toast. The most delicious, however, is one that is French Bread because it will soak up the egg mixture.

Here’s what you’ll do …

In a shallow bowl or dish (wide enough for one slice of bread to fit), beat eggs. Then add and mix in the coconut milk, vanilla, cinnamon, sugar, orange zest, and salt. Soak bread for 10 seconds on each side. Cook on a greased griddle or in a non-stick pan until both sides are cooked through. Serve with powdered sugar and butter or maple syrup.
