Peanut Butter Cookie

The easiest peanut butter cookie that tastes just like the Nutter Butter cookies I loved as a kid, but with a healthy twist. Bring to a party or just have a solo party at home when you indulge in this delicious combination of ingredients. My new favorite recipe to share with EVERYONE! I even create a few batches to keep in the freezer for an after-work snack during the week!

Peanut Butter Lover Cookie

Servings: 12

Combine:

2 tablespoons of coconut oil, melted

1/2 teaspoon vanilla

1/4 teaspoon cinnamon

1/4 cup honey

3/4 cup peanut butter

1/3 cup oats

1 handful of raisins

Roll into 1-inch balls and smash using a fork for a checkerboard look. Allow to harden in the freezer. Keep in freezer for up to 2 weeks. No need to bake! Makes 12 small (extremely rich) cookies.

Note: Add chocolate chips or coconut flakes for variety, and continue to love week after week.
