Mmmmmmm … Sometimes you need something light and delicious to get you through a hot day. This summer salad refreshes the palate with its tasty, filling-yet-light goodies and dressing.
SUMMER SALAD
Here’s what you’ll need:
1 bunch of curly kale, spine removed
1 avocado, peeled and diced
1 medium tomato, diced
2 teaspoons chives, chopped
2 tablespoons almonds, slivered or chopped
2 tablespoons pre-candied pecans (sold at most grocery stores)
1/2 cup quinoa (prepared)
Chop or tear the kale and place into a large bowl. Add the rest of the ingredients and anything else that sounds like it would taste good! Top with a delicious dressing like the one below.
Equal parts olive oil and balsamic vinaigrette
One clove of garlic, peeled and smashed or diced
1/2 teaspoon Dijon mustard
1 teaspoon soy sauce or tamari sauce
Salt and pepper to taste
Combine, mix, shake and enjoy!
