This is a delicious and fast snack, lunch or even dinner! With summer around the corner, it’s nice to have something to eat that is cold, but still more filling than fruit or salad. For this salmon salad, I use a can of wild Alaskan salmon that I get from Costco and non-GMO (genetically modified organism) vegenaise. You might be wondering, “What in the world is VEGENAISE?” This is a product with characteristics similar to mayonnaise, but it doesn’t contain eggs. I prefer this product because, although still mostly fat, many times nowadays chickens are being given hormones and being fed GMO grains. With that said, their eggs are not necessarily very good for us to eat. Well, enough about that; hopefully it didn’t ruin your appetite for this amazing meal!
Salmon Salad
Ingredients
1 can of wild Alaskan salmon
2 tablespoons Vegenaise
1 tablespoon cilantro
1/4 avocado, sliced into pieces
1 carrot, shredded
1 tomato, diced
2 snap peas, chopped
Dash of sea salt to taste
Pinch of pepper to taste
Directions:
First, drain the water and/or oil out of the can of salmon. Then, in a medium sized mixing bowl, add salmon and mix in the rest of the ingredients. That’s it! Then ENJOY!
This recipe will serve two people comfortably or one person for a couple of days. It takes about 10 minutes to prepare.
